Preparation
- Peel all the potatoes and slice them thinly using a mandolin slicer for uniform cooking.
- Spray a baking dish with cooking spray to prevent sticking.
Layering
- Layer the Yukon potato slices in the baking dish, spreading them evenly across the bottom.
- Sprinkle aged manchego and smoked gouda cheese over the potatoes.
- Drizzle about 1/4 cup of fat-free half & half over the cheese.
- Season with salt, pepper, and rosemary.
- Continue layering potato slices, cheese, cream, and spices until three layers are formed.
- Incorporate sweet potato slices after the Yukon potatoes, followed by cheese, half & half, and spices.
- Complete the layering process, ensuring the top layer is well-covered with cheese and cream.
Baking
- Cover the baking dish with foil and bake in a preheated oven at 375°F (190°C) for 1 hour.
- Uncover and continue baking for another hour until the potatoes are tender.
- Increase the oven temperature to 475°F (245°C) and bake for an additional 30 minutes to crisp the top.
- Once cooked, let cool slightly before serving.
Notes
For perfect results, ensure uniform slices for even cooking. Feel free to experiment with different cheeses and herbs.
