Preparation
- In a bowl of an electric mixer, combine butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 3-5 minutes.
- Scrape down the sides of the bowl and add the eggs one at a time, mixing until fully incorporated after each addition.
- Pour in the vanilla extract and molasses, mixing until fully incorporated.
- Scrape the sides of the bowl again and add the bread flour, all-purpose flour, malted milk powder, baking soda, and kosher salt. Mix slowly to avoid flour clouds, then increase speed and mix for about 2 minutes.
- Gently fold in the semi-sweet and milk chocolate chips using a spatula or briefly with the mixer.
- Using a #40 cookie scoop, place cookie dough balls onto a parchment-lined baking sheet. Cover and chill in the refrigerator for 24 hours.
Baking
- Preheat your oven to 350°F (175°C).
- Bake cookies until the edges are golden brown and the centers puff slightly, about 12-14 minutes.
- Remove cookies from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.
Notes
Chill the dough for better flavor and texture. Consider adding nuts or different types of chocolate chips for variations. Don’t overbake for desired chewiness.
