Ingredients

For the Stuffed Peppers
  • 4 medium medium bell peppers, any color (seeded and halved) You can use any color bell peppers.
  • 1.5 pound lean ground beef Use a lean option for a healthier choice.
  • 1 packet taco seasoning mix (use gluten-free if needed) Check for gluten-free options if required.
  • 0.75 cup water Used to simmer with the taco seasoning.
  • 1.5 cup cheddar cheese (shredded) Reserve half for topping.
  • 1 cup sour cream Can substitute with Greek yogurt for a lighter option.
  • 0.5 cup salsa Use your preferred type of salsa.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by spraying it with nonstick spray.
  2. Wash the bell peppers, slice them lengthwise in half, and remove the seeds and membranes. Place the halves cut-side up in a microwave-safe casserole dish. Add ¼ cup water, cover, and microwave for about 5 to 6 minutes, or until the peppers just start to soften. Carefully drain any excess water.
Cooking the Filling
  1. Brown the ground beef in a large skillet over medium heat, breaking it up as it cooks until no longer pink. Drain excess grease.
  2. Add taco seasoning mix and ¾ cup water to the skillet, stir and simmer until the mixture thickens according to packet directions.
  3. Remove from heat and stir in sour cream, salsa, and 1 cup shredded cheddar cheese until fully combined.
Assembling and Baking
  1. Arrange the softened bell pepper halves in the prepared baking dish. Fill each half with the beef mixture, packing it in tightly. Top with remaining ½ cup cheddar cheese.
  2. Bake for 20 to 30 minutes, or until the peppers are tender and the cheese is melted and bubbling. Serve warm.

Notes

For added flavor, consider black beans or corn in the filling, or experiment with different cheeses. Spiciness can be enhanced with jalapeños or hot sauce. Prepare filling ahead of time to save time when assembling.
