Preparation
- Roughly crush the Golden Oreos in a bowl with some larger pieces for texture. Mix in the strawberry Jello powder and melted butter, stirring well until combined. Pour onto a plate and spread in a single layer to firm up.
- Preheat your oven to 350°F (175°C).
- In a mixer, cream together the softened butter, white sugar, and light brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Pour in the strawberry extract and whisk in the food coloring until evenly blended.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- With the mixer on low speed, slowly add the flour mixture to the wet batter and mix until just combined.
- Scoop a tablespoon of dough and roll it in the prepared Oreo crunch mixture.
- Place the coated dough balls on a baking sheet with enough space between them.
Baking
- Bake the cookies in the preheated oven for 8 minutes. Once slightly golden, sprinkle more crushed Oreo mixture on top and return to the oven for another 4 minutes.
- Let the cookies cool completely on a wire rack.
Notes
Use room temperature ingredients for better mixing. You can crush Oreos in a food processor or a ziplock bag with a rolling pin. Experiment with flavors by substituting the extract.
