Crunch Topping
  • 20 Golden Oreos Provides a crunchy layer.

  • 4 tablespoons butter, melted Binds the Oreo mixture.

Method

Preparation
  1. Roughly crush the Golden Oreos in a bowl with some larger pieces for texture. Mix in the strawberry Jello powder and melted butter, stirring well until combined. Pour onto a plate and spread in a single layer to firm up.
  2. Preheat your oven to 350°F (175°C).
  3. In a mixer, cream together the softened butter, white sugar, and light brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour in the strawberry extract and whisk in the food coloring until evenly blended.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. With the mixer on low speed, slowly add the flour mixture to the wet batter and mix until just combined.
  8. Scoop a tablespoon of dough and roll it in the prepared Oreo crunch mixture.
  9. Place the coated dough balls on a baking sheet with enough space between them.
Baking
  1. Bake the cookies in the preheated oven for 8 minutes. Once slightly golden, sprinkle more crushed Oreo mixture on top and return to the oven for another 4 minutes.
  2. Let the cookies cool completely on a wire rack.

Notes

Use room temperature ingredients for better mixing. You can crush Oreos in a food processor or a ziplock bag with a rolling pin. Experiment with flavors by substituting the extract.
