  • 3/4 teaspoon garlic powder for a savory aroma
  • 3/4 teaspoon smoked paprika for a hint of smokiness
  • 2 teaspoons Salt to taste, adjust based on preference
  • to taste Freshly ground black pepper to enhance flavors
Main Ingredients
  • 2 tablespoons avocado oil for cooking
  • 1.5 pounds top sirloin steak cut into 1-inch cubes
  • 1 pound sweet potatoes peeled and cut into 1/2-inch cubes
  • 1 number red bell pepper diced for color and crunch
  • 2 number green onions sliced thin for freshness
  • 2 tablespoons chopped cilantro for a herbaceous finish
  • 1 number lime juiced to brighten the dish

Method

Preparation
  1. In a small bowl, combine the chili powder, ground cumin, garlic powder, smoked paprika, salt, and pepper to create the spice blend.
  2. Place diced sweet potatoes in a microwave-safe bowl, add a tablespoon of water, and microwave for 2 minutes. Stir and microwave for an additional 1-2 minutes until softened but not fully cooked.
  3. Toss the partially cooked sweet potatoes with a teaspoon of the spice blend to coat evenly.
Cooking
  1. Heat a tablespoon of avocado oil in a large skillet over medium-high heat. Toss the steak cubes in the remaining spice blend, add to the skillet in a single layer, and cook for 1-2 minutes per side until browned. Remove from skillet and set aside.
  2. Add the remaining tablespoon of oil to the skillet. Sauté the diced red bell pepper, sweet potatoes, and sliced green onions together for about 3-4 minutes until tender.
  3. Return the cooked steak to the skillet with chopped cilantro. Stir to combine, then turn off the heat and squeeze lime juice over everything. Adjust seasoning if necessary.
Serving
  1. Garnish with extra sliced green onions and cilantro, then serve hot on its own or with a light green salad.

Notes

Choose tender cuts of steak like top sirloin for best results. Customize the spice level and add other vegetables as desired. Perfect for meal prep and easy to reheat.
