Ingredients

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.75 teaspoon salt optional
Wet Ingredients
  • 0.5 cup unsalted butter, cubed and cold for that perfect flaky texture
  • 0.5 cup cream cheese lending a rich creaminess
  • 0.5 cup granulated sugar to sweeten just right
  • 0.75 cup powdered sugar adding a light, sweet touch
  • 1 large egg to bind everything together
  • 2 teaspoons pure vanilla extract for aromatic warmth
Finishing Touch
  • 1 cup jimmies sprinkles providing a joyful burst of color and fun

Method

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare your baking pans by lining them with silicone baking mats or parchment paper. Set the pans aside.
  2. In the bowl of your food processor, combine the flour, baking soda, baking powder, and salt. Pulse a few times to blend these dry ingredients evenly.
  3. Add the cold butter cubes and cold cream cheese to the mixture. Follow this by adding both the granulated and powdered sugars. Pulse until the mixture reaches a sandy texture.
  4. Add the large egg and pure vanilla extract to the sandy dough mixture. Blend until a cohesive dough forms.
  5. Using your hands or a small scoop, roll the dough into 1 ½ tablespoon-sized balls. Coat each ball in jimmies sprinkles.
  6. Place the rolled dough balls onto your prepared baking pan, spacing them about 1-2 inches apart. Use the bottom of a glass to gently flatten the cookies.
Baking
  1. Bake for 8-10 minutes, or until the cookies appear lightly underbaked.
  2. Allow your cookies to rest on the baking pan for about 2 minutes. If they look puffy, gently press them down with the bottom of a glass while they cool.
  3. Transfer the cookies to a wire rack to cool completely.

Notes

Ensure that your butter and cream cheese are cold to help create a flakier cookie. Don’t overbake! The cookies will continue to cook slightly while cooling on the pan. For a twist, substitute half of the all-purpose flour with whole wheat flour.
