Preparation
- Preheat your oven to 375°F (190°C). Prepare your baking pans by lining them with silicone baking mats or parchment paper. Set the pans aside.
- In the bowl of your food processor, combine the flour, baking soda, baking powder, and salt. Pulse a few times to blend these dry ingredients evenly.
- Add the cold butter cubes and cold cream cheese to the mixture. Follow this by adding both the granulated and powdered sugars. Pulse until the mixture reaches a sandy texture.
- Add the large egg and pure vanilla extract to the sandy dough mixture. Blend until a cohesive dough forms.
- Using your hands or a small scoop, roll the dough into 1 ½ tablespoon-sized balls. Coat each ball in jimmies sprinkles.
- Place the rolled dough balls onto your prepared baking pan, spacing them about 1-2 inches apart. Use the bottom of a glass to gently flatten the cookies.
Baking
- Bake for 8-10 minutes, or until the cookies appear lightly underbaked.
- Allow your cookies to rest on the baking pan for about 2 minutes. If they look puffy, gently press them down with the bottom of a glass while they cool.
- Transfer the cookies to a wire rack to cool completely.
Notes
Ensure that your butter and cream cheese are cold to help create a flakier cookie. Don’t overbake! The cookies will continue to cook slightly while cooling on the pan. For a twist, substitute half of the all-purpose flour with whole wheat flour.
