Ingredients

Dough Ingredients
  • ¼ cup non-dairy or regular dairy milk (warmed to 110℉) Choose creamy milk that adds moisture to the dough.
  • 1 ½ teaspoons instant yeast This magic ingredient makes the bread rise beautifully.
  • 2 teaspoons granulated sugar A touch of sweetness to balance the tanginess of sourdough.
  • 2 cups + 1 Tablespoon all-purpose flour Provides the structure to our fluffy bread.
  • 200 grams sourdough discard (unfed, at room temperature) Adds depth and a unique flavor profile.
  • 1 large egg (lightly beaten) Helps bind the dough together for a tender texture.
  • 1 Tablespoon fresh parsley or rosemary (chopped) Brightens up the flavor with fresh, herbal notes.
  • 1 teaspoon kosher salt Essential for enhancing the flavors.
  • 1 teaspoon garlic powder Adds that aromatic punch in every bite.
  • 2 Tablespoons unsalted butter (melted) Introduces rich creaminess to the dough.
Garlic Topping Ingredients
  • 7 Tablespoons unsalted butter (softened) Used in the garlic topping to bring richness.
  • 1 Tablespoon fresh parsley or rosemary (chopped) For the topping, enhancing the aroma.
  • 1 Tablespoon garlic powder More garlicky goodness to savor.
  • ½ teaspoon kosher salt To season the topping.
  • Flaky sea salt (for topping) Adds a delightful crunch and enhances flavor.

Method

Preparation
  1. In the bowl of a stand mixer fitted with a dough hook, combine the warmed milk, instant yeast, and sugar. Wait until the mixture is frothy.
  2. Gradually add in the flour, sourdough discard, beaten egg, chopped herbs, salt, and garlic powder. Slowly drizzle in 2 tablespoons of melted butter while the mixer is on low speed.
  3. Once a shaggy dough forms, increase the mixer speed to medium for about four to five minutes.
Kneading
  1. Transfer the dough to a lightly floured surface and knead it with your hands for about 3-4 minutes until it’s smooth and slightly tacky.
  2. Adjust the texture as needed by adding flour or milk, one tablespoon at a time.
First Rise
  1. Place the kneaded dough into a greased bowl, cover with plastic wrap, and let it rise in a warm place for 60-90 minutes until it has doubled in size.
Prepare the Topping
  1. While the dough rises, mix together the softened butter, chopped herbs, garlic powder, and ½ teaspoon of salt in a small bowl. Reserve 1 tablespoon for later.
Shape the Bread
  1. Once the dough has risen, turn it out onto a floured surface and divide it into 12 equal pieces.
  2. Flatten each piece into a rough circle (about 4 inches in diameter) and spread 1-2 teaspoons of the garlic herb butter mixture on each circle. Fold the dough over like a taco.
  3. Place the folded pieces in a greased loaf pan with the folded side down.
Second Rise
  1. Cover the loaf pan with plastic wrap or a clean kitchen towel and allow it to rise for another 30-45 minutes or until puffy but not exceeding the edges of the pan.
Baking
  1. Preheat your oven to 350℉. Once preheated, bake the bread for 30 minutes, then cover lightly with aluminum foil and bake for an additional 5-10 minutes.
  2. The finished loaf should be golden brown and reach an internal temperature of about 200℉.
Finishing Touches
  1. As soon as the loaf is out of the oven, brush with the reserved herb butter and sprinkle flaky sea salt on top.
  2. Let the loaf cool in the pan for about 10 minutes before removing it to serve.

Notes

For the best experience, serve the bread warm and fresh from the oven. The melted butter and garlic aroma are irresistible!
