Preparation
- Preheat your oven to 375 degrees Fahrenheit. Line your cookie sheets with parchment paper or lightly grease them.
- In the bowl of a stand mixer, combine the pumpkin puree, granulated sugar, oil, vanilla extract, and the egg. Mix until smooth.
- In a separate bowl, stir together the flour, baking powder, cinnamon, and salt.
- In another bowl, dissolve the baking soda in the milk.
Mixing
- Combine the dry flour mixture and the dissolved baking soda mixture with the pumpkin mixture. Mix on low speed until well combined.
- Fold in the chocolate chips and walnuts until evenly distributed.
Baking
- Using a medium cookie scoop, drop mounds of cookie dough onto the prepared cookie sheets, leaving space between each mound.
- Bake in the preheated oven for 10 to 12 minutes or until lightly golden around the edges.
- Allow the cookies to cool slightly on the sheets before transferring them to a wire rack to cool completely.
Notes
For an extra burst of flavor, add a teaspoon of pumpkin spice or nutmeg. To keep cookies soft, remove them at the 10-minute mark and let them cool on the baking sheet.
