Wet Ingredients
  • 1 cup creamy pumpkin puree
  • 1 cup granulated sugar Ensures the perfect balance of sweetness
  • ½ cup oil (canola or vegetable) For a tender texture
  • 1 teaspoon vanilla extract Warm vanilla extract for added flavor
  • 1 large egg To bind the ingredients together
Dry Ingredients
  • 2 cups all-purpose flour For structure
  • 2 teaspoons baking powder Provides lift
  • 1 teaspoon cinnamon For warm flavor
  • ½ teaspoon salt
  • 1 teaspoon baking soda Dissolved in 1 teaspoon of milk
  • 1 teaspoon milk To dissolve baking soda
Add-ins
  • 1 cup semi-sweet chocolate chips For indulgence
  • 1 cup chopped walnuts Optional for added crunch

Method

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit. Line your cookie sheets with parchment paper or lightly grease them.
  2. In the bowl of a stand mixer, combine the pumpkin puree, granulated sugar, oil, vanilla extract, and the egg. Mix until smooth.
  3. In a separate bowl, stir together the flour, baking powder, cinnamon, and salt.
  4. In another bowl, dissolve the baking soda in the milk.
Mixing
  1. Combine the dry flour mixture and the dissolved baking soda mixture with the pumpkin mixture. Mix on low speed until well combined.
  2. Fold in the chocolate chips and walnuts until evenly distributed.
Baking
  1. Using a medium cookie scoop, drop mounds of cookie dough onto the prepared cookie sheets, leaving space between each mound.
  2. Bake in the preheated oven for 10 to 12 minutes or until lightly golden around the edges.
  3. Allow the cookies to cool slightly on the sheets before transferring them to a wire rack to cool completely.

Notes

For an extra burst of flavor, add a teaspoon of pumpkin spice or nutmeg. To keep cookies soft, remove them at the 10-minute mark and let them cool on the baking sheet.
