Method
Preparation
- In a large heavy pot, combine 1 cup of water, 1/4 cup of lemon juice, 1/2 cup of honey, 1 tsp of cinnamon, and 1/4 tsp of nutmeg. Stir until well mixed.
- Peel, core, and cut the apples into chunks, mixing them into the pot to prevent browning.
Cooking
- Turn on the stove to medium heat. Cover the pot and cook for about 15 minutes, stirring occasionally until the apples have softened.
- Remove from heat and mash the apples into the juices as desired.
Canning
- For canning, spoon the mixture into five hot, scalded 1/2 pint containers, leaving 1/2 inch headroom. Process in a water bath for 15 minutes.
- Allow jars to cool before storing.
Notes
For richer flavor, consider adding a splash of vanilla extract or combining different apple varieties. Store applesauce in an airtight container in the refrigerator for up to one week.
