Method

Preparation
  1. Start by washing and cutting all the vegetables: cherry tomatoes, zucchini, red bell pepper, red onion, and artichoke hearts.
  2. In a large mixing bowl, combine the prepared vegetables with extra virgin olive oil, Greek oregano, sea salt, and black pepper. Toss until evenly coated.
Roasting

  2. Spread the seasoned vegetable mixture evenly onto the lined baking sheet.
  3. Roast in the oven for about 25 minutes, stirring halfway through.
Assembly
  1. Prepare lemon zest, lemon juice, kalamata olives, and feta cheese while the vegetables are roasting.
  2. Once the roasted vegetables are done, allow them to cool for 15-20 minutes.
  3. Transfer roasted vegetables to a mixing bowl and add lemon zest, lemon juice, and kalamata olives. Stir to combine.
  4. Move the mixture to a serving dish and sprinkle crumbled feta cheese on top.
Serving
  1. Serve at room temperature for the best flavor.

Notes

For extra flavor, add fresh herbs like parsley or basil before serving. You can also substitute feta with goat cheese or a dairy-free alternative.
