Method

Preparation
  1. In a large soup pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the diced green and yellow bell peppers along with the onion. Sauté until the veggies start to soften and become fragrant, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for an additional minute until aromatic, but be careful not to burn it.
  4. Introduce the ground turkey to the pot. Cook it thoroughly, breaking it up into small pieces with a spatula as it cooks until browned evenly.
  5. Add the chicken broth, drained black beans, corn, pumpkin puree, and diced tomatoes. Sprinkle in the chili powder, salt, and black pepper. Stir well to combine all ingredients.
  6. Cover the pot with a lid and let the chili cook on medium-low heat for about 20 minutes.
Serving
  1. Ladle the chili into bowls and top each serving with optional cheddar cheese, sour cream, diced avocado, and chopped cilantro.

Notes

For a richer flavor, consider adding cumin or smoked paprika. Adjust the consistency by simmering longer without a lid. For a vegetarian version, substitute ground turkey with lentils or additional beans.
