Ingredients

For the pralines
  • 1 tablespoon unsalted butter Adds a rich, creamy base to the pralines.
  • 1 ½ cups light brown sugar This ingredient brings a hint of caramel-like flavor.
  • 1 ½ cups granulated sugar Essential for achieving the perfect sugary consistency.
  • ¼ teaspoon kosher salt A touch of salt balances the sweetness.
  • 3 tablespoons dark corn syrup Ensures the pralines have the ideal chewy texture.
  • 1 cup whole milk Adds creaminess and moisture.
  • 1 teaspoon vanilla extract Deepens the flavor.
  • 1 ½ cups pecan halves (toasted) Provides a delightful crunch and nutty flavor.

Method

Preparation
  1. Line two baking sheets with waxed paper or aluminum foil sprayed with cooking spray.
  2. Butter the sides of a 3-quart sauce pot.
Cooking
  1. In the pot, combine the light brown sugar, granulated sugar, kosher salt, corn syrup, and whole milk. Stir gently.
  2. Place the pot over medium heat and stir frequently until the sugar dissolves.
  3. Once dissolved, increase the heat to bring the mixture to a boil, attaching a candy thermometer.
  4. Cook until the mixture reaches the softball stage (235°F), stirring occasionally.
  5. Remove from heat and allow to cool for 10 minutes.
  6. Add vanilla extract and beat the mixture by hand with a wooden spoon for about 2 minutes.
  7. Mix in the toasted pecans until the mixture loses its glossy shine.
  8. Quickly drop spoonfuls onto the prepared baking sheets, working swiftly.
  9. Timing is key; aim to drop them after losing gloss but before they start hardening.

Notes

Use a heavy-bottomed pot to avoid hot spots, keep the pot's sides clean from sugar crystals during cooking, and enjoy variations like adding a sprinkle of sea salt or different nuts.
