Preparation
- Line two baking sheets with waxed paper or aluminum foil sprayed with cooking spray.
- Butter the sides of a 3-quart sauce pot.
Cooking
- In the pot, combine the light brown sugar, granulated sugar, kosher salt, corn syrup, and whole milk. Stir gently.
- Place the pot over medium heat and stir frequently until the sugar dissolves.
- Once dissolved, increase the heat to bring the mixture to a boil, attaching a candy thermometer.
- Cook until the mixture reaches the softball stage (235°F), stirring occasionally.
- Remove from heat and allow to cool for 10 minutes.
- Add vanilla extract and beat the mixture by hand with a wooden spoon for about 2 minutes.
- Mix in the toasted pecans until the mixture loses its glossy shine.
- Quickly drop spoonfuls onto the prepared baking sheets, working swiftly.
- Timing is key; aim to drop them after losing gloss but before they start hardening.
Notes
Use a heavy-bottomed pot to avoid hot spots, keep the pot's sides clean from sugar crystals during cooking, and enjoy variations like adding a sprinkle of sea salt or different nuts.
