  • 1/2 cup vegetable oil As specified in the brownie package instructions
  • 1/4 cup water As specified in the brownie package instructions

Cookie Dough Ingredients
  • 1/2 cup bread flour
  • 3/4 cup all-purpose flour Plus 2 tablespoons
  • 1 stick salted butter Melted and browned
  • 2 tablespoons vegetable oil
  • 3/4 cup dark brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 and 1/4 cups crushed Oreo cookies (approximately 13 cookies)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8 or 9x9 inch baking dish.
  2. In a larger bowl, combine the brownie mix, eggs, water, and vegetable oil as per the package instructions. Stir until combined and add the molasses; mix thoroughly.
  3. Pour the brownie batter into the prepared baking dish and bake for 20 minutes.
Making the Cookie Dough
  1. In a saucepan, melt the stick of salted butter over medium heat and let it simmer for about 4-5 minutes until it turns caramel brown.
  2. Transfer the browned butter to a heat-safe bowl and let it cool slightly.
  3. In a medium bowl, combine the bread flour, all-purpose flour, baking soda, and salt. Whisk well.
  4. Once the butter has cooled slightly, mix in the vegetable oil, dark brown sugar, white sugar, vanilla extract, and egg; stir to combine.
  5. Crush the Oreo cookies using a Ziploc bag or food processor until you have a mix of fine crumbs and larger pieces.
  6. Add the flour mixture to the butter mixture and stir until fully incorporated, then fold in the crushed Oreo cookies.
Baking
  1. After the brownie base has baked for 20 minutes, remove it from the oven and spread the cookie dough evenly over the brownie layer.
  2. Return to the oven and bake for an additional 25 minutes or until the cookie dough is set.
  3. Let cool, cut into squares, and enjoy.

Notes

Keep a close watch over the butter while browning to avoid burning. Reserve some Oreo chunks for topping if desired. Feel free to add chocolate chips or nuts for variation.
