Method
Preparation
- Preheat your oven to 350°F (175°C). Grease an 8x8 or 9x9 inch baking dish.
- In a larger bowl, combine the brownie mix, eggs, water, and vegetable oil as per the package instructions. Stir until combined and add the molasses; mix thoroughly.
- Pour the brownie batter into the prepared baking dish and bake for 20 minutes.
Making the Cookie Dough
- In a saucepan, melt the stick of salted butter over medium heat and let it simmer for about 4-5 minutes until it turns caramel brown.
- Transfer the browned butter to a heat-safe bowl and let it cool slightly.
- In a medium bowl, combine the bread flour, all-purpose flour, baking soda, and salt. Whisk well.
- Once the butter has cooled slightly, mix in the vegetable oil, dark brown sugar, white sugar, vanilla extract, and egg; stir to combine.
- Crush the Oreo cookies using a Ziploc bag or food processor until you have a mix of fine crumbs and larger pieces.
- Add the flour mixture to the butter mixture and stir until fully incorporated, then fold in the crushed Oreo cookies.
Baking
- After the brownie base has baked for 20 minutes, remove it from the oven and spread the cookie dough evenly over the brownie layer.
- Return to the oven and bake for an additional 25 minutes or until the cookie dough is set.
- Let cool, cut into squares, and enjoy.
Notes
Keep a close watch over the butter while browning to avoid burning. Reserve some Oreo chunks for topping if desired. Feel free to add chocolate chips or nuts for variation.
