Ingredients

Wet Ingredients
  • 1 cup butter (at room temperature) This creamy base will ensure your cookies are soft and rich.
  • 1 cup granulated white sugar For that sweetness that balances the flavors beautifully.
  • 1/2 cup brown sugar Adds a deeper, molasses-like flavor to your cookies.
  • 2 large eggs These will bind the ingredients together perfectly.
  • 1 tablespoon unsulphured molasses Gives a hint of depth and sweetness.
  • 1 tablespoon vanilla extract Infuses an aromatic flavor that makes everything better.
Dry Ingredients
  • 1 1/2 cups all-purpose flour Essential for a soft and chewy texture.
  • 3 cups oats (a combination of 2 cups large flake oats and 1 cup rolled oats) Provides that heartiness and chew that oatmeal cookies are known for.
  • 1 teaspoon baking powder Allows your cookies to rise just enough.
  • 1 1/2 teaspoons ground cinnamon The warm spice everyone loves in dessert.
  • 1/2 teaspoon sea salt Enhances all the flavors harmoniously.
  • 2 cups raisins These little gems add sweetness and a chewy texture.

Method

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. Line a baking sheet with a silicone mat or parchment paper.
  3. In a mixing bowl, cream together the butter and both types of sugar until light and fluffy.
  4. Incorporate the eggs, molasses, and vanilla extract into the creamed mixture. Mix well until fully combined.
  5. In a separate bowl, combine the flour, baking powder, cinnamon, and sea salt.
  6. Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  7. Fold in the raisins.
  8. Using a 1 ½ tablespoon scoop, scoop dough onto your prepared baking sheet, placing about 12 cookie mounds per sheet.
  9. Gently flatten each scoop a bit with the back of a spoon.
Baking
  1. Place the baking sheet in the oven and bake for about 10 minutes.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Raisin Substitute: Consider using chocolate chips or dried cranberries instead of raisins. Chill the dough for a thicker cookie. Add nuts for an added crunch.
