  • 125 g Oil Keeps the cake moist and tender.
  • 1 teaspoon Vanilla extract Adds a warm, aromatic flavor complementing the chocolate.
  • 56 g Unsalted butter Provides richness and a buttery taste.
  • 300 g Hot water Ensures the batter is smooth and aids in a moist texture.
  • Some Butter (softened) or oil spray (for pans) Necessary for preparing your cake pans.

Method

Preparation
  1. Mix the whole milk and white vinegar in a bowl and let it sit for 5 to 10 minutes to curdle, creating homemade buttermilk.
  2. Coat the inside of your cake pans with softened butter or spray oil. Line the bottoms with cake liners or parchment paper.
  3. In a medium bowl, whisk together the granulated sugar, all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
  4. In a large mixing bowl, whisk together the prepared buttermilk, eggs, oil, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until smooth. Avoid overmixing.
  6. In a small saucepan, heat the hot water and unsalted butter until melted. Carefully incorporate this into the batter, stirring continuously.
  7. Divide the batter evenly between the prepared pans.
Baking
  1. Preheat your oven to 350ºF (176ºC) and bake the cakes for around 30 minutes, or until the centers bounce back or a toothpick inserted comes out clean.
  2. Allow the cakes to cool in the pans on a wire rack for a few minutes before gently releasing them.

Notes

Sifting the flour is recommended for an even lighter cake. You can make this cake in advance, and the layers can be frozen for later use. Substitute eggs with applesauce or flaxseed meal for a vegan option.
