Method

Preparation
  1. Preheat the oven to 300°F (150°C) and place an oven rack in the center.
  2. Line a baking sheet with heavy-duty aluminum foil.
  3. In a food processor, combine beef, lamb, bread crumbs, salt, black pepper, oregano, onion powder, garlic powder, and cumin. Process until a paste-like consistency is achieved, about 1 minute.
  4. Form the meat mixture into two loaves about 1 inch high, 8 inches long, and 4 inches wide on the prepared baking sheet.
Cooking
  1. Bake the meat loaves for 40 to 45 minutes, until firm and reaching an internal temperature of 160°F (71°C).
  2. Let the loaves rest for about 10 minutes before slicing them between ⅛ inch and ¼ inch thick.
  3. In a skillet, heat about 1 tablespoon of olive oil over medium heat. Cook the gyro slices in batches until lightly browned, about 30 to 60 seconds per side.
Assembly
  1. Serve the warm gyro slices wrapped in pita bread, topped with tzatziki sauce, sliced tomatoes, onions, lettuce, and crumbled feta cheese.

Notes

For extra flavor, consider marinating the meat mixture with lemon juice and fresh herbs before cooking. Leftovers can be used in salads or pasta dishes.
