Ingredients

Main Ingredients
  • 1 pound ground beef Freshly ground for best flavor and texture.
  • 1 6.8 ounce box Beef Rice A Roni Use the rice and pasta inside the box, save the seasoning packet for later.
  • 1 large egg Binding agent for meatballs.
  • 2 1/4 cups water Essential for cooking the rice and pasta.

Method

Preparation
  1. Grab 1 pound of ground beef and toss it into a medium-sized mixing bowl.
  2. Pour 1 box of Beef Rice A Roni into the bowl, avoiding the seasoning packet for now.
  3. Add an egg to the bowl and mix everything together with your hands until well combined.
  4. Shape the mixture into about 25 golf ball-sized meatballs.
Cooking
  1. Heat a large, deep skillet over medium-high heat and place the meatballs in the pan to brown on both sides.
  2. In a measuring cup, combine 2 1/4 cups of water with the seasoning packet from the Rice A Roni. Stir well.
  3. Pour the seasoned liquid over the browned meatballs, reduce heat to medium-low, cover and let simmer for 30-40 minutes.
  4. Once the liquid has been absorbed and the rice and pasta are fully cooked, serve and enjoy.

Notes

Consider adding onions, garlic, or herbs for extra flavor. You can also bake the meatballs if short on time, but adjust cooking time accordingly. These meatballs pair well with salads, vegetables, or bread.
