Preparation
- Cut the corn tortillas into 1-inch pieces and set aside. Dice the onion, grate the cheese if necessary, and prep the canned ingredients by opening and draining them.
Cooking
- In a large skillet over medium-high heat, brown the ground beef along with the diced onion. Use a wooden spoon to break up the beef as it cooks until no longer pink and onions are tender. Drain excess fat.
- Reduce heat to medium, add minced garlic and sauté for about 30 seconds, stirring frequently.
- Sprinkle in taco seasoning, garlic powder, onion powder, oregano, and smoked paprika. Stir well to combine.
- Pour in enchilada sauce, water, and salsa. Mix until well combined.
- Add the cut corn tortillas and stir gently to coat them in the sauce.
- Add black beans and corn, stir to combine, and allow to simmer until heated through.
- Turn off heat and sprinkle shredded cheese on top. Cover to let cheese melt.
- Serve hot, topped with fresh cilantro, sour cream, avocado slices, or extra salsa.
Notes
For extra flavor, consider adding diced bell peppers or jalapeños. Use pre-cooked shredded beef or rotisserie chicken to reduce cooking time. For a spicier dish, add crushed red pepper flakes. Vegetarian option: substitute ground beef with lentils and mushrooms.
