  • 2 cups shredded cheddar cheese Creamy and rich, it melts beautifully.
  • 1 roma tomato (diced) Fresh and juicy, adding a vibrant color.
  • 0.5 bell pepper (diced) Crunchy and sweet, for an added veggie punch.
  • 1 scallion (sliced) Provides a fresh, zesty bite.
  • to taste chopped fresh cilantro A burst of freshness to finish.
  • as needed sour cream for serving Creamy richness that makes each bite decadent.

Method

Preparation
  1. Start by heating a large skillet over medium heat. Add the ground beef along with the chili powder, cumin, oregano, salt, and pepper. Cook until the beef is browned and no longer pink, breaking it apart with a spatula. Drain any excess grease and set aside.
  2. While the beef is cooking, preheat your air fryer to 320°F (160°C). Preheating ensures that your nachos get crispy and the cheese melts perfectly.
Assembly and Cooking
  1. Line the air fryer basket with parchment paper to prevent sticking. Start by adding half of the tortilla chips at the bottom. Sprinkle half of the cheese, followed by half of the diced tomato, diced bell pepper, and the cooked beef. Repeat the layering process with the remaining chips, cheese, tomato, pepper, and beef.
  2. Carefully place the basket in the air fryer and cook for about 5 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
  3. Once the nachos are ready, remove them from the air fryer. Top with sliced scallions and a generous sprinkle of chopped cilantro. Serve hot with sour cream or any additional toppings of your choice.

Notes

Ensure your air fryer is properly preheated to achieve that perfect crisp. Feel free to mix different cheeses such as Monterey Jack or pepper jack for an extra flavor kick. Consider adding jalapeños or olives for additional textures and tastes. Prepare the beef in advance and store it in the fridge for up to two days for quicker assembly.
