Preparation
- Start by slicing the green tomatoes into 1/4-inch thick slices. Generously sprinkle salt over the slices and allow them to sit for at least five minutes.
- Create a streamlined breading station with flour in one bowl, whisked eggs in a second bowl, and a mixture of cornmeal, breadcrumbs, paprika, and cayenne pepper in a third bowl.
- After resting, pat the tomatoes dry using a paper towel.
- Preheat your air fryer to 380 degrees Fahrenheit.
Breading and Cooking
- Dip each dried tomato slice into the flour, coating both sides lightly. Then move to the whisked egg, fully covering it, and finally dredge in the cornmeal mixture.
- Place the breaded tomato slices in a single layer in the air fryer basket, avoiding overlap. Cook for 7-9 minutes, flipping halfway and spritzing with cooking oil.
Serving
- Once golden and crispy, carefully remove the green tomatoes from the air fryer. Serve immediately with a tangy dipping sauce.
Notes
For extra crispiness, consider double breading the tomatoes. Experiment with flavored breadcrumbs or herbs. Avoid overcrowding the air fryer basket.
