Ingredients

Tomatoes and Coatings
  • 3-4 pieces green tomatoes Firm and slightly tart, these tomatoes are the star of the show.
  • 1/2 teaspoon salt Enhances the natural taste of the tomatoes.
  • 1/2 cup flour Creates a light coating.
  • 2 pieces eggs Whisked to bind the dry ingredients.
  • 1/3 cup cornmeal Provides crunch and sweetness.
  • 1/3 cup breadcrumbs Adds an extra layer of crispiness.
  • 1/8 teaspoon paprika Infuses a subtle smokiness.
  • a pinch cayenne pepper Adds a touch of spice.

Method

Preparation
  1. Start by slicing the green tomatoes into 1/4-inch thick slices. Generously sprinkle salt over the slices and allow them to sit for at least five minutes.
  2. Create a streamlined breading station with flour in one bowl, whisked eggs in a second bowl, and a mixture of cornmeal, breadcrumbs, paprika, and cayenne pepper in a third bowl.
  3. After resting, pat the tomatoes dry using a paper towel.
  4. Preheat your air fryer to 380 degrees Fahrenheit.
Breading and Cooking
  1. Dip each dried tomato slice into the flour, coating both sides lightly. Then move to the whisked egg, fully covering it, and finally dredge in the cornmeal mixture.
  2. Place the breaded tomato slices in a single layer in the air fryer basket, avoiding overlap. Cook for 7-9 minutes, flipping halfway and spritzing with cooking oil.
Serving
  1. Once golden and crispy, carefully remove the green tomatoes from the air fryer. Serve immediately with a tangy dipping sauce.

Notes

For extra crispiness, consider double breading the tomatoes. Experiment with flavored breadcrumbs or herbs. Avoid overcrowding the air fryer basket.
