  • 2 tablespoons ghee, divided or substitute with duck fat or tallow if following AIP
  • 1 tablespoon olive oil provides a fruity aroma
  • 3/4 cup diced carrots approximately 2 medium carrots
  • 3/4 cup diced celery approximately 2 medium stalks
  • 3/4 cup diced yellow onion approximately 1 small onion
  • 2 cloves minced garlic infuses the dish with a fragrant kick
  • 4 pieces gold potatoes or use rutabaga or sweet potato for a Paleo/AIP alternative
  • 1 teaspoon dried basil releases a warm, herbal scent
  • 1 teaspoon dried parsley gives a fresh herbaceous note
  • 4 cups chicken or turkey bone broth or stock for a nourishing base
  • 1 teaspoon sea salt to enhance flavors
  • 1/2 teaspoon black pepper omit for AIP
  • to taste freshly chopped parsley for garnish
  • 1 piece white sweet potato, peeled and chopped for creaminess
  • 3-4 cups water, divided to control the soup's consistency
  • 1/4 cup unsweetened coconut yogurt or substitute with canned coconut cream

Method

Sausage
  1. Heat a stockpot or Dutch oven over medium-high heat. Add the Italian sausage and cook, stirring and chopping until crumbled and browned. Transfer to a plate, leaving 1 tablespoon of grease in the pot. If there's not enough grease, add 1 tablespoon of olive oil.
Veggies
  1. In the same pot, with the retained grease or olive oil, melt 1 tablespoon of ghee. Add the carrots, celery, and onion. Sauté for 5-7 minutes until softened and aromatic. Stir in the minced garlic and cook for an additional 30 seconds.
Potatoes and Seasoning
  1. Stir in the chopped potatoes, basil, parsley, salt, and black pepper. Add the second tablespoon of ghee, mixing well. Pour in the broth and bring to a boil over medium-high heat. Once boiling, reduce heat to medium, cover, and simmer for 15-20 minutes until the potatoes are fork-tender.
Cream Sauce
  1. In a separate pot, boil the diced white sweet potato in 2 cups of water until fork-tender, about 10-12 minutes. Drain and transfer to a blender with 2/3 cup of water and 1/4 cup of coconut yogurt. Blend until smooth, adding more water as needed to achieve a creamy consistency.
Finishing Touches
  1. Pour the cream sauce into the soup, stirring to combine. Reduce heat to low, return the sausage to the pot, and stir for about 30 seconds to meld flavors. Season with additional salt and pepper, garnish with chopped parsley, and serve hot.

Notes

To enhance flavor, sauté the sausage until caramelized. For a spicier profile, add red pepper flakes. For a thicker soup, blend in an extra half sweet potato.
