Preparation
- In a large pot over medium heat, add the olive oil. Once hot, toss in the diced onion. Cook for 7-10 minutes, stirring frequently, until the onion becomes lightly browned and fragrant.
- Introduce minced garlic to the pot and cook for an additional 1-2 minutes, allowing the aromatic essence to fill your kitchen.
- Add the vegan ground beef into the pot. With a wooden spoon, break it apart into small pieces, cooking for about 5-7 minutes until it is browned throughout.
Cooking
- Add the tomato paste, chili powder, cumin, sugar, black pepper, salt, and cayenne pepper to the mixture. Stir well and cook for another minute for the spices to bloom.
- Pour in the vegetable broth, diced tomatoes (with their juices), kidney beans, and pinto beans. Stir well and bring the chili to a boil over high heat.
- Turn the heat down to low and let the chili simmer, uncovered, for about 15 minutes.
Serving
- Once done, serve the chili hot, topped with vegan sour cream, shredded cheddar cheese, and sliced green onions for a fresh finish.
Notes
For an extra kick, try adding a dash of hot sauce or additional cayenne pepper at the end. If you prefer a thicker chili, let it simmer a bit longer to reduce the liquid. You can customize this recipe by adding your favorite vegetables, such as bell peppers or zucchini, for added nutrients.
