Method

Preparation
  1. In a large pot over medium heat, add the olive oil. Once hot, toss in the diced onion. Cook for 7-10 minutes, stirring frequently, until the onion becomes lightly browned and fragrant.
  2. Introduce minced garlic to the pot and cook for an additional 1-2 minutes, allowing the aromatic essence to fill your kitchen.
  3. Add the vegan ground beef into the pot. With a wooden spoon, break it apart into small pieces, cooking for about 5-7 minutes until it is browned throughout.
Cooking
  1. Add the tomato paste, chili powder, cumin, sugar, black pepper, salt, and cayenne pepper to the mixture. Stir well and cook for another minute for the spices to bloom.
  2. Pour in the vegetable broth, diced tomatoes (with their juices), kidney beans, and pinto beans. Stir well and bring the chili to a boil over high heat.
  3. Turn the heat down to low and let the chili simmer, uncovered, for about 15 minutes.
Serving
  1. Once done, serve the chili hot, topped with vegan sour cream, shredded cheddar cheese, and sliced green onions for a fresh finish.

Notes

For an extra kick, try adding a dash of hot sauce or additional cayenne pepper at the end. If you prefer a thicker chili, let it simmer a bit longer to reduce the liquid. You can customize this recipe by adding your favorite vegetables, such as bell peppers or zucchini, for added nutrients.
