Method

Preparation
  1. In a medium pan, combine the dark chocolate, unsalted butter, icing sugar, double cream, and a pinch of salt. Place the pan over medium heat and stir continuously until everything melts into a smooth and creamy mixture.
  2. Pour the mixture through a sieve to ensure a silky texture and then transfer it to the fridge to set until thick enough to spread.
Make the Cookie Dough
  1. In a large mixing bowl, whisk together the melted butter, cocoa powder, soft light brown sugar, and granulated sugar until fully combined.
  2. Incorporate the egg yolks and the whole egg into the mixture, whisking until well combined.
  3. In another bowl, whisk together the plain flour, salt, baking powder, and baking soda until well mixed.
  4. Gradually add the dry mixture to the wet mixture, stirring until a dough forms and no flour remains visible.
  5. Fold in the chopped chocolate for delicious chunks.
Chill and Shape
  1. Cover the cookie dough and refrigerate it for about 20 minutes to help the cookies hold their shape.
  2. Take about 120g of dough per cookie and roll it into balls. Repeat until all the dough is used.
  3. Arrange the cookie balls on a tray and freeze for 1 hour to ensure they bake beautifully.
Bake
  1. Preheat your oven to 180°C (350°F) about 10 minutes before baking and line a baking tray with parchment paper.
  2. Place the cookie dough balls on the baking tray, leaving enough room for spreading. Bake for around 20-25 minutes until the edges are firm but the center remains soft.
  3. Allow the cookies to cool on the tray until fully set.
Assemble
  1. When the icing has thickened and the cookies are cool, transfer the fudge icing into a piping bag fitted with a large star tip.
  2. Pipe swirls or dollops of icing on top of each cookie, adding sprinkles if desired.
Serve
  1. Your gourmet Chocolate Fudge Cookies are now ready to devour! Enjoy with a cup of tea or coffee.

Notes

For added flavor, consider adding a teaspoon of espresso powder to the cocoa. You can also experiment with different chocolate types for varied results. Store in an airtight container for up to a week or freeze for longer storage.
