Preparation
- Butter and chill your moulds by greasing the inside with soft butter, ensuring every nook is covered. Chill them in the fridge for a few minutes, then repeat the greasing process. Dust with cocoa powder and chill again until ready.
- Prepare a bain marie by placing a heatproof bowl over simmering water. Melt together chocolate and butter, ensuring no water gets in. Once melted, cool slightly.
- In a separate bowl, whisk eggs and caster sugar until light and fluffy using a stand mixer.
- Fold in the melted chocolate mixture gently, then sieve in the flour and fold carefully to maintain airiness.
- Pour the mixture into prepared moulds and chill overnight or for at least a couple of hours.
Baking
- Preheat the oven to 200°C (392°F). Place chilled fondants on a baking tray and bake for 10-12 minutes, watching for them to pull away from the edges yet remain slightly wobbly in the center.
- Once baked, let them stand for a minute, then flip onto a plate. If needed, run a knife around the edges to release them. Dust with cocoa powder and serve immediately.
Notes
For best quality, use high-quality chocolate and avoid overbaking for a gooey center. Experiment with adding spices or flavors for variety. Store any leftovers in an airtight container in the fridge for up to 2 days, or freeze unbaked mixtures for longer storage.
