Ingredients

Main Ingredients
  • 2 pcs eggs Fresh, vibrant eggs provide structure while contributing to the rich texture.
  • 60 g caster sugar Fine sugar dissolves effortlessly, adding sweetness without any graininess.
  • 38 g plain flour Supports the structure while allowing the fondants to rise slightly.
  • 60 g unsalted butter Rich and creamy, enhances flavor and provides a luscious mouthfeel.
  • 75 g good-quality dark chocolate Choose chocolate with at least 70% cocoa for best results.
  • Cocoa powder (for dusting) Adds a beautiful finish and a hint of chocolate flavor.

Method

Preparation
  1. Butter and chill your moulds by greasing the inside with soft butter, ensuring every nook is covered. Chill them in the fridge for a few minutes, then repeat the greasing process. Dust with cocoa powder and chill again until ready.
  2. Prepare a bain marie by placing a heatproof bowl over simmering water. Melt together chocolate and butter, ensuring no water gets in. Once melted, cool slightly.
  3. In a separate bowl, whisk eggs and caster sugar until light and fluffy using a stand mixer.
  4. Fold in the melted chocolate mixture gently, then sieve in the flour and fold carefully to maintain airiness.
  5. Pour the mixture into prepared moulds and chill overnight or for at least a couple of hours.
Baking
  1. Preheat the oven to 200°C (392°F). Place chilled fondants on a baking tray and bake for 10-12 minutes, watching for them to pull away from the edges yet remain slightly wobbly in the center.
  2. Once baked, let them stand for a minute, then flip onto a plate. If needed, run a knife around the edges to release them. Dust with cocoa powder and serve immediately.

Notes

For best quality, use high-quality chocolate and avoid overbaking for a gooey center. Experiment with adding spices or flavors for variety. Store any leftovers in an airtight container in the fridge for up to 2 days, or freeze unbaked mixtures for longer storage.
