Ingredients

Main ingredients
  • 200 gr Dark Cooking Chocolate (70% chocolate recommended) Use high-quality chocolate for a deep flavor.
  • 150 gr Unsalted Butter Adds richness and helps achieve the perfect fondant texture.
  • 120 gr Caster Sugar Fine sugar dissolves easily for delightful sweetness.
  • 4 whole Eggs (at room temperature) Essential for binding ingredients.
  • 50 gr Plain / All-Purpose Flour Just a little flour for structure while keeping it gooey.

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Prepare a 20cm (8-inch) Springform Pan by lining the bottom with baking paper and lightly greasing the edges with butter or oil.
  3. Finely chop the dark chocolate and place it in a heat-proof bowl with cubed unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth.
  4. In a separate bowl, whisk together the eggs and caster sugar until small bubbles form, about one minute.
Combining and Baking
  1. Pour the melted chocolate and butter mixture into the egg and sugar mixture and whisk until smooth.
  2. Sift in the plain flour and gently whisk until just combined; avoid overmixing.
  3. Pour the batter into the prepared springform pan and spread evenly. Bake for 20 to 22 minutes, until set around the edges but still gooey in the center.
  4. Cool completely before removing from the pan to ensure the perfect fondant texture.

Notes

For richer flavor, use chocolate with at least 70% cocoa. Optionally, add sea salt to enhance sweetness. Serve warm for a molten texture.
