Preparation
- Preheat your oven to 180°C (350°F).
- Prepare a 20cm (8-inch) Springform Pan by lining the bottom with baking paper and lightly greasing the edges with butter or oil.
- Finely chop the dark chocolate and place it in a heat-proof bowl with cubed unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth.
- In a separate bowl, whisk together the eggs and caster sugar until small bubbles form, about one minute.
Combining and Baking
- Pour the melted chocolate and butter mixture into the egg and sugar mixture and whisk until smooth.
- Sift in the plain flour and gently whisk until just combined; avoid overmixing.
- Pour the batter into the prepared springform pan and spread evenly. Bake for 20 to 22 minutes, until set around the edges but still gooey in the center.
- Cool completely before removing from the pan to ensure the perfect fondant texture.
Notes
For richer flavor, use chocolate with at least 70% cocoa. Optionally, add sea salt to enhance sweetness. Serve warm for a molten texture.
