- Preheat your oven to 350°F and lightly grease six 5-inch pie pans.
- Sift together the flour, baking soda, and salt in a medium bowl, then set aside.
- Cream the softened butter and sugars in a mixer until light and fluffy.
- Add the eggs and vanilla, mixing until fully incorporated.
- Slowly add the flour mixture, mixing until just combined.
- Fold in about 3/4 of the chocolate morsels and half of the confetti sprinkles.
- Using a 2-1/2 inch ice cream scoop, place six large mounds of dough into each pan.
- Press reserved chocolate morsels and sprinkles on top.
- Bake for 18-20 minutes until edges are golden; centers should remain soft.
- Cool in the pans for a few minutes, then transfer them to a wire rack.
Preparation for the Frosting
- Cream butter and vanilla in a stand mixer until blended.
- Sift together confectioners’ sugar and cocoa, then gradually add to butter mixture.
- Mix thoroughly with each addition for a smooth texture.
- Add milk gradually until frosting reaches a creamy, spreadable consistency.
- Pipe frosting around the edges of the cooled cookie cakelets.
- Sprinkle with remaining confetti sprinkles and place a tiny scoop of ice cream in the center.
Notes
Use room temperature ingredients for better mixing results; consider experimenting with different cookie morsels for custom flavor. Chill dough for 30 minutes before baking for enhanced flavor.
