Ingredients

For the Cookie Dough
  • 16 Tablespoons butter, softened Soft, creamy butter is key to achieving that melt-in-your-mouth texture.
  • 1.5 cups brown sugar This gives the cookies their rich sweetness and slight chewiness.
  • 2 pieces eggs Eggs bind the ingredients together, adding moisture and fluffiness.
  • 2 teaspoons vanilla extract A touch of vanilla enhances the flavors, creating a warm aroma.
  • 1.75 cups all-purpose flour Essential for structure, providing a satisfying bite.
  • 1.75 cups old-fashioned rolled oats They add heartiness and chew, making each bite wholesome.
  • 1 teaspoon baking powder Helps cookies rise slightly, creating that perfect softness.
  • 1 teaspoon baking soda Another leavening agent that ensures the cookies puff up just right.
  • 1 teaspoon salt Balances the sweetness and enhances the overall flavor.
  • 1 cup milk or dark chocolate chunks Chocolate brings a decadent richness and a touch of bitter to counterbalance the sugar.
  • 1 cup dried cherries, roughly chopped Juicy, tart cherries add a fruity surprise that elevates the traditional cookie.
  • flake sea salt Sprinkled on top for a beautiful finish and a subtle saltiness.

Method

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In the bowl of an electric mixer, beat together the softened butter and brown sugar on medium-high speed until creamy and light, about 3 minutes.
  3. Add the eggs one by one, beating well after each addition, then mix in the vanilla extract.
  4. Gradually add the all-purpose flour, oats, baking powder, baking soda, and salt; beat on low speed just until combined.
  5. Stir in the chocolate chunks and cherries.
  6. Refrigerate the dough for 2 hours or overnight, or for a quick 15-minute freeze on baking sheets if short on time.
Baking
  1. Drop heaping tablespoons of dough onto a parchment-lined cookie sheet, leaving about 2 inches of space between each scoop.
  2. Bake for 11-13 minutes or until the edges turn golden and the centers remain puffy.
  3. For presentation, dot with additional chocolate and cherries just before baking.
  4. Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
  5. Sprinkle with flaky sea salt before serving.

Notes

Chill Time: Don’t rush refrigeration; allowing the dough to rest enhances flavors and prevents cookies from spreading too much. You can mix different chocolate varieties for added depth of flavor. Substitute dried cherries with cranberries or raisins for variation.
