Ingredients

Brownie Base
  • 150 g unsalted butter (room temperature) Adds depth and richness
  • 300 g sugar (caster or granulated) Creates the perfect balance of flavors
  • 3 large eggs Brings moisture and structure
  • 115 g plain flour Binds the brownies together
  • 70 g cocoa powder Provides chocolate flavor
  • 1/2 tsp salt Enhances flavors
  • 1/2 tsp baking powder Helps brownies rise slightly
  • 200 g chopped chocolate (dark or milk or both) Creates gooey brownie bites
  • 250 g cherries (pitted, cut into halves and quarters) Adds a burst of flavor and color

Method

Preparation
  1. Preheat your oven to 175°C (160°C fan) and butter an 8" square baking tin, then line it with baking paper.
Melting the Butter and Sugar
  1. In a medium saucepan, combine butter and 100g of sugar, heat over medium, stirring until sugar dissolves and butter melts. Set aside to cool.
Mixing Eggs and Sugar
  1. In a large bowl, whisk eggs and remaining sugar for about 5 minutes until light and fluffy. Pour in the cooled butter-sugar mixture and whisk to combine.
Combining Dry Ingredients
  1. In another bowl, mix flour, cocoa powder, baking powder, and salt. Add this dry mixture to the egg-butter mixture, whisking until just combined.
Adding Chocolate and Cherries
  1. Gently fold in chopped chocolate and cherries, then pour the mixture into the prepared baking tin and smooth the top.
Baking to Perfection
  1. Bake in the preheated oven for 38-40 minutes; the surface should be shiny with cracks. Use a toothpick to check - a few crumbs should cling to it.
Cooling and Slicing
  1. Let the brownies cool in the tin for at least 1 hour. For best flavor, refrigerate overnight. Use the overhang to lift out and slice into 16 pieces.

Notes

For variation, try mixing dark and milk chocolate. Ensure cherries are pitted to avoid surprises. Complete cooling enhances texture for easier slicing.
