Method

Preparation
  1. Preheat your oven to 450 degrees Fahrenheit.
  2. Prepare the sweet potatoes by peeling and chopping them into even, small pieces.
  3. Line two large baking sheets with foil and generously spray them with cooking spray.
  4. Toss the sweet potatoes with 1 tablespoon of olive oil on each pan, ensuring they are evenly coated.
  5. Spread them out in a single layer.
  6. Bake the sweet potatoes for about 30 minutes or until slightly charred on one side. Stir halfway through and switch baking sheets.
Cooking the Burger
  1. While the potatoes roast, heat a large deep skillet over medium-high heat.
  2. Add the onion and ground beef, breaking it up with a spatula.
  3. Cook the beef mixture until it’s no longer pink, then add salt, pepper, Montreal steak seasoning, ketchup, and mustard.
  4. Stir everything together and cook for an additional 10 minutes to allow the flavors to meld and the beef to brown.
Preparing Toppings and Sauce
  1. Chop your lettuce, purple cabbage, red onion, and grape tomatoes to prepare the fresh toppings.
  2. In a glass measuring cup, combine all sauce ingredients and mix well. Taste and adjust seasoning, if necessary.
Assembly
  1. Set out all the components: roasted sweet potatoes, burger mix, fresh toppings, and sauce.
  2. Allow everyone to assemble their own bowls. Drizzle with sauce and add crispy onions.

Notes

Choose the right sweet potatoes; look for medium-sized ones that feel heavy for their size. Customize toppings to suit your taste and make ahead for busy weeknights.
