  • 2 tbsp olive oil (divided) The rich, fruity flavor adds depth.
  • 1 lb shaved steak This tender, juicy beef cooks quickly.
  • 1 small onion (thinly sliced) Sweet and aromatic for added crunch.
  • 1/2 medium red pepper (thinly sliced) Adds sweetness and vibrant color.
  • 6 oz mushrooms (chopped) Earthy and meaty with umami flavor.
  • 1 tbsp Worcestershire sauce Amplifies the savory notes.
  • 1/2 tsp kosher salt Essential for balancing flavors.
  • 1 tsp black pepper Brings warmth and subtle heat.
  • 8 slices provolone cheese Rich and melty, creating a creamy topping.

Method

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Slice each green bell pepper from the top down through the core and remove the core, seeds, and membrane. Place in a greased 9x13 baking dish and bake for 15 minutes.
Cooking
  1. In a large skillet over medium-high heat, add half of the olive oil, then add the shaved steak. Cook for about 5-7 minutes, until fully browned, and transfer to a plate.
  2. In the same skillet, add the remaining olive oil. Add the sliced onion and red bell pepper, cooking for about 5 minutes. Then add the chopped mushrooms and cook for an additional 2 minutes until tender.
  3. Return the cooked steak to the skillet, drizzle in the Worcestershire sauce, sprinkle in the kosher salt and black pepper, and stir. Break up 2 slices of provolone cheese into the mixture and stir until melted.
Assembly
  1. Remove the partially baked green peppers from the oven. Divide the steak and vegetable mixture into each pepper. Top with a slice of provolone cheese.
Final Bake
  1. Return the dish to the oven and bake for 15-30 minutes, depending on your texture preference for the peppers.

Notes

Adjust baking time based on how soft you want the peppers and feel free to use different cheeses like mozzarella or cheddar. Store properly for up to 3 days in the refrigerator or freeze for up to 2 months.
