  • ½ cup water Essential for creating a smooth syrup.
  • 1 teaspoon honey Adding depth and natural sweetness.
  • 12 ounces fresh raspberries The star of the dish, vibrant and juicy.
  • 1 cup Champagne Opened 30 minutes prior to elevate the dessert.
  • 1 lime Gives a refreshing zing to balance the sweetness.

Method

Preparation of Ingredients
  1. Combine the sugar and water in a small saucepan over medium heat. Stir gently until the sugar dissolves completely.
  2. Bring the mixture to a gentle boil for about 1 minute to create a simple syrup. Remove from heat and stir in the honey.
Blend Raspberries
  1. Place fresh raspberries in a blender. Once the syrup has cooled slightly, pour it over the raspberries.
  2. Blend on high for about 30 seconds until you achieve a smooth purée.
Strain the Mixture
  1. Pour the raspberry blend through a fine-mesh strainer into a mixing bowl, pushing the mixture through while discarding any seeds.
Add Champagne and Lime
  1. Stir in the Champagne and add 3 to 4 tablespoons of fresh lime juice for a tangy kick.
Freeze the Sorbet
  1. Pour the mixture into a freezer-proof dish. Cover securely and place in the freezer overnight to solidify.
Blend to Perfection
  1. The following day, take the sorbet out and break it into small chunks. Blend these in a food processor until creamy.
  2. Return the sorbet to the freezer-proof dish and store it in the freezer until ready to enjoy.

Notes

For best results, let Champagne breathe before mixing. Experiment with other fruits like strawberries or peaches. Garnish with mint leaves or whipped coconut cream for elegance.
