Preparation
- Preheat your oven to 325°F (163°C) and generously grease a 10-inch Bundt pan.
- Using a peeler, cut 8 long, thin strips from one of the carrots and line the Bundt pan with these strips as a decorative base.
- Shred the remaining carrots (1½ cups) and set aside.
- In a small bowl, add the raisins and pour boiling water over them to soften.
- In a large bowl, combine flour, chopped walnuts, baking soda, cinnamon, and salt. Whisk together.
- In a mixer, blend eggs, sugar, and vegetable oil on low speed.
- Add in drained crushed pineapple, shredded carrots, and vanilla extract. Mix until combined.
- Finally, mix in the dry ingredients and drained raisins until just combined.
- Transfer the batter carefully into the prepared Bundt pan.
Baking
- Bake in the preheated oven for approximately 75 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely in the pan, then invert onto a serving platter.
Notes
For optimal flavor, use fresh ingredients. Consider adding shredded coconut or diced apple for extra flavor. Avoid overmixing the batter to prevent a dense cake.
