Method

Preparation
  1. Preheat your oven to 325°F (163°C) and generously grease a 10-inch Bundt pan.
  2. Using a peeler, cut 8 long, thin strips from one of the carrots and line the Bundt pan with these strips as a decorative base.
  3. Shred the remaining carrots (1½ cups) and set aside.
  4. In a small bowl, add the raisins and pour boiling water over them to soften.
  5. In a large bowl, combine flour, chopped walnuts, baking soda, cinnamon, and salt. Whisk together.
  6. In a mixer, blend eggs, sugar, and vegetable oil on low speed.
  7. Add in drained crushed pineapple, shredded carrots, and vanilla extract. Mix until combined.
  8. Finally, mix in the dry ingredients and drained raisins until just combined.
  9. Transfer the batter carefully into the prepared Bundt pan.
Baking
  1. Bake in the preheated oven for approximately 75 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool completely in the pan, then invert onto a serving platter.

Notes

For optimal flavor, use fresh ingredients. Consider adding shredded coconut or diced apple for extra flavor. Avoid overmixing the batter to prevent a dense cake.
