Preparation
- Preheat your oven to 350°F (180°C) and line a 13x9 inch baking dish with parchment paper.
- In a large bowl, combine the crust ingredients: flour, brown sugar, and salt. Mix until well blended.
- Pour in the melted butter and mix until combined. Firmly press the mixture into the bottom of the prepared pan.
- Bake the crust for 12-15 minutes until light golden brown; cool for 10 minutes.
- Reduce oven temperature to 325°F (160°C) and prepare the filling.
Filling
- In a bowl, whisk together eggs, condensed milk, flour, brown sugar, melted butter, vanilla, and salt until well blended.
- Fold in the sweetened shredded coconut until evenly distributed.
- Pour the filling over the cooled crust and smooth out. Sprinkle with additional coconut.
- Bake for 25-30 minutes until the top is golden brown. Allow to cool completely.
- Lift the bars from the pan using parchment and cut into squares or bars for serving.
Notes
Use fresh coconut for enhanced flavor. Ensure butter is fully melted to avoid clumps. Let eggs come to room temperature for smoother batter. Reduce brown sugar for less sweetness.
