Ingredients

Dry Ingredients
  • 2 cups all-purpose flour (270 g) Perfectly milled for a light and airy crumb.
  • ⅓ cup granulated sugar (66 g) Balances beautifully with blueberries.
  • ½ teaspoon kosher salt Enhances flavors.
  • ¼ teaspoon baking soda For perfect rise and texture.
  • 1 tablespoon baking powder Gives scones their lightness.
Wet Ingredients
  • 4 oz unsalted butter (cold and cubed, 113 g) Key for achieving flaky texture.
  • 1 heaping cup fresh blueberries (175 g) Juicy and flavorful.
  • 1 large egg Provides richness and moisture.
  • ⅔ cup buttermilk (160 g) Adds tangy flavor and moisture.
  • ½ teaspoon vanilla extract Complementary flavor for the blueberries.
  • 1 tablespoon turbinado sugar (or white sanding sugar) Adds crunch when baked.

Method

Preparation
  1. In a medium mixing bowl, add the flour, granulated sugar, kosher salt, baking soda, and baking powder. Mix until well combined.
  2. Toss in the cold, cubed butter and work it into the flour mixture until it resembles large pea-sized crumbs.
  3. Gently fold in the fresh blueberries.
  4. In a separate measuring cup, combine the buttermilk, egg, and vanilla extract. Beat until fully mixed.
  5. Create a well in the center of the flour mixture and pour in the wet mixture, reserving about 2 tablespoons for egg wash. Fold gently until just combined.
  6. Turn the dough onto a floured surface. Gently fold it over itself 2-3 times and shape into a circle about 1 ½ inches thick.
  7. Cut the dough into 8 equal scones and place on a lined baking sheet.
  8. Refrigerate or freeze the scones while preheating the oven to 400°F (200°C).
  9. Brush the tops and sides with the reserved egg wash and sprinkle with turbinado sugar.
  10. Bake for 23-24 minutes, or until golden brown and a toothpick comes out clean.
  11. Cool completely on a wire rack.

Notes

Work quickly to keep the butter cold for a tender crumb. Avoid overmixing to keep scones fluffy. Use seasonal blueberries for the best flavor.
