Preparation
- Preheat your air fryer to 350 degrees F (175 degrees C) while preparing your ingredients.
- Tear off a piece of aluminum foil, roughly the size of your air fryer basket, and fold the edges to create a makeshift bowl for your vegetables.
- In the foil bowl, combine the finely chopped peppers, onion, oil, taco seasoning, and salt. Gently stir the mixture.
Cooking
- Place the foil bowl into the air fryer and cook for about 5 minutes or until softened.
- Carefully remove the bowl from the air fryer to cool.
- Lightly grease the air fryer basket with non-stick spray and place one tortilla in the basket.
- Layer ¼ of the cheese, half of the sautéed vegetables, and half of the sliced green onions on the tortilla, then finish with another ¼ of the cheese.
- Place a second tortilla on top and air fry for 3-4 minutes per side.
- Repeat the process with the remaining ingredients to create a second quesadilla. Remove from the air fryer when golden.
Notes
For added flavor, incorporate spices like cumin or chili powder. To enhance nutrition, add black beans or corn. You can also add proteins like shredded chicken or ground beef.
