  • ⅔ cup Panko breadcrumbs Ensures a crispy finish
  • to taste Salt and pepper Enhances all flavors
  • as needed Oil spray For a perfect, golden-brown exterior

Method

Preparation
  1. Preheat your air fryer to 400°F.
  2. Scrub the Russet potatoes clean and poke holes in them with a fork to allow steam to escape.
  3. Air fry the potatoes for 45-60 minutes until they are fork-tender, rotating them every 20 minutes for even cooking.
  4. Once cooked, cut the potatoes in half lengthwise and press the insides into a mixing bowl, discarding the skins.
  5. Add butter, garlic powder, onion powder, salt, pepper, and minced green onion to the potato flesh and mix gently.
  6. Stir in the cheese and adjust seasoning as needed.
  7. Using a scoop, portion out the potato mixture, roll it into balls, and freeze for 15-20 minutes.
Breading
  1. Set up three shallow bowls: one with flour mixed with salt and pepper, one with whisked egg and water, and one with Panko breadcrumbs mixed with salt and pepper.
  2. Roll each potato ball in the flour, coat in the egg wash, then roll in Panko breadcrumbs.
Cooking
  1. Re-preheat the air fryer to 400°F and spray the basket lightly with oil.
  2. Arrange the croquettes in a single layer, spacing them out. Air fry for 5-7 minutes until golden and crispy.
  3. Shake the basket halfway through for even cooking. Allow to cool slightly before serving.

Notes

Consider adding herbs like parsley for flavor variation, and ensure all ingredients are at room temperature before mixing. Leftover croquettes can be frozen individually for easy reheating.
