Ingredients

Dough Ingredients
  • 2 cups self-rising flour Plus more for kneading the dough
  • 6 tbsp salted butter, cold and diced Rich and creamy for a flaky texture
  • ¾ - 1 cup buttermilk, cold For moisture and tenderness
Topping
  • 2 tbsp salted butter, for brushing Separated into two pieces for topping

Method

Preparation
  1. Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper and set it aside.
  2. In a large bowl, pour the flour. Use a pastry cutter or two forks to cut in the 6 tablespoons of diced, cold butter until the mixture resembles pea-sized lumps.
  3. Add ½ cup of buttermilk to the flour-butter mixture. Mix gently until a soft dough starts to form, adding more buttermilk if necessary.
  4. Transfer the dough to a lightly floured surface and knead gently, adding more flour as needed to prevent sticking.
Cooking
  1. Pat the dough to a thickness of about ¾ inch.
  2. Cut out 10 biscuits using a 2-inch round cutter and place them on the prepared baking sheet.
  3. Refrigerate the biscuits for about 10 minutes before baking.
  4. Brush the biscuits with 1 tablespoon of melted salted butter and bake for 13-15 minutes until risen and golden brown.
  5. Once out of the oven, brush the biscuits with the remaining tablespoon of melted salted butter.

Notes

For best results, keep all dairy ingredients cold to ensure a flakier biscuit. Adjust buttermilk based on flour's humidity. Knead just until dough comes together to prevent toughness.
