Ingredients

Cookie Dough Ingredients
  • 2.25 cups plain flour (all purpose) The foundation of our cookies, bringing a fluffy texture.
  • ⅓ cup sugar (granulated or caster) A touch of sweetness that balances the nutty notes.
  • ¼ cup ground almonds Adds a delightful nuttiness and unique texture.
  • 5/8 cup vegan butter Ensures the cookies are wonderfully tender.
  • 3 tbsp soy milk Binds the dough and contributes to a moist texture.
  • ¼ cup jam (redcurrant, raspberry, apricot...) Provides a burst of flavor with each bite.
  • 1 tbsp icing sugar A delicate finishing touch that adds sweetness.

Method

Preparation
  1. In a large mixing bowl, blend the dry ingredients: combine the flour, sugar, and ground almonds.
  2. Rub in the vegan butter until the mixture resembles coarse crumbs.
  3. Slowly add the soy milk and knead gently until you form a smooth dough.
  4. Divide the dough into manageable portions and roll out one portion to about 3 mm thick on a floured surface.
  5. Use a cookie cutter to create your cookie shapes, cutting a smaller opening in half for the top cookies.
Baking
  1. Arrange the cookie shapes on a lined baking tray and bake in a pre-heated fan oven at 180°C (356°F) for 10-12 minutes.
  2. Allow them to cool on the tray for a few minutes to firm up.
Assembly
  1. Spread a small spoonful of jam on each cookie base and gently place the cookie with the cut-out on top.
  2. Dust a light layer of icing sugar over the assembled cookies.

Notes

Chill the dough for about 30 minutes for easier handling. Consider using various jam flavors for a unique twist.
