  • 1 teaspoon black pepper Adds a subtle kick.
  • 4 tablespoons chili powder Provides smoky and sweet notes.
  • 1 tablespoon oregano Earthy and aromatic.
  • 3 tablespoons ground cumin Adds a warm flavor profile.
  • 1 teaspoon ground coriander Brightens up the flavor.
Liquid Ingredients
  • 3 ounces tomato paste Creates a thick base.
  • 28 ounces diced tomatoes Provides acidity and sweetness.
  • 2 cups beef stock Lends moisture; adjust for consistency.

Method

Preparation
  1. In a large Dutch oven, heat the olive oil over medium heat. Add the onions and jalapeños, cooking for 6-8 minutes until the onions are translucent.
  2. Stir in the minced garlic and cook for about 1 minute until fragrant.
  3. Add the ground beef, salt, and pepper, breaking apart the beef while leaving some larger chunks. Cook for approximately 8 minutes until the beef is no longer pink, draining any excess grease if necessary.
Cooking
  1. Mix in the chili powder, cumin, oregano, and coriander, stirring well to combine. Allow the spices to bloom for about 1 minute.
  2. Add the tomato paste, diced tomatoes, and beef stock. Bring to a simmer, then reduce heat to medium-low. Cook for 30 minutes to 1 hour, stirring occasionally until the chili thickens.
Serving
  1. Serve the chili hot and enjoy with your favorite toppings such as cheese, sour cream, or fresh diced tomatoes.

Notes

For added depth, mix ground meats like beef and turkey. Adjust heat with extra jalapeños or cayenne pepper. Let the chili rest to enhance flavors.
