Ingredients

Main Ingredients
  • 1.5 cups mashed sweet potato Choose ripe sweet potatoes for natural sweetness.
  • 0.5 cups runny peanut butter Adds a rich, velvety element.
  • 0.5 cups cocoa powder Opt for high-quality cocoa for best results.
  • 2 tsp vanilla extract Elevates the flavor.
  • 0.5 cups maple syrup Natural sweetener with caramel flavor.
  • 1/3 cups dairy-free milk Brings the ingredients together.
  • 2/3 cups gluten-free oat flour Provides structure without gluten.
  • 1/3-1/2 cups dairy-free chocolate chips For molten pockets of chocolate.

Method

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a food processor, combine the mashed sweet potato, peanut butter, cocoa powder, vanilla extract, maple syrup, dairy-free milk, and gluten-free oat flour. Pulse until a thick, very smooth batter forms.
  3. Fold in the dairy-free chocolate chips if desired.
Baking
  1. Pour the batter into a lined baking dish and spread evenly.
  2. Bake for about 23 minutes, until the edges are set but the center remains slightly soft.
Cooling & Serving
  1. Allow the brownies to cool on the counter for an hour, then refrigerate for another 30 minutes to 1 hour.
  2. If desired, frost the brownies, then cut into squares.

Notes

To ensure a fudgy consistency, do not overmix the batter. You can use canned sweet potatoes for a quicker prep. Experiment with different dairy-free chocolate chips to cater to taste preferences.
